Our New Fall Menu is Out!

We have our fall decorations up and our pumpkin beers and ciders ready and waiting for you.  Fall has officially arrived and it’s been a busy time here at the pub! We’ve had beer dinners and food tastings, we are in the final round in 6 (count them….six) categories in 417 Magazine’s Best of Springfield competition, and it’s also the Daily Telegraph’s Best of British time once again. Plus, we have a host of new promotions heading your way… Anyone up for a Ladies Night Wednesday or a Kid’s Eat Free Night? Oh and Bill’s birthday was this week (that’s right, seems like the Queen isn’t the only one celebrating a diamond jubilee this year!)

In addition to all this we have a new fall menu out this week!  We have some new items like our French Onion Soup and Fisherman’s Pie(super yum by the way!) and some returning fall favorites like our Arborio rice balls and Mother’s Rarebit. Circle B Ranch

We at the pub would like to take this opportunity to give thanks to John and Marina Backes of Circle B Ranch. It is one of their fantastic Berkshire Heritage pigs that Bill has on the spit roast today.

John and Marina started the 90 acre Circle B Ranch in the rolling hills and woodlands of Seymour, MO in 2010. Their hog farm is certified humane and is also run naturally and sustainably. They do things the “old fashioned way” raising the pigs on outdoor pasture so the hogs are free to run and exercise, which makes Circle B Ranch more succulent.

This naturally grown pork is rich in Omega 3 fat, vitamin D and is free from growth hormones, steroids and antibiotics.  Berkshire pork is known for its rare characteristic marbling which consistently produces a meat with superb tenderness, moisture and flavor. Join us on Saturday for the Farmers Gastropub 1st Inaugural Patio Pig Roast! $19.00

Chef/Owner Bill Griffiths brings his considerable skills to bear on a 112lb pig on his own custom built spit roast!

Dinner will include: Spit roast whole pig, served with sweet potatoes, butternut squash, roasted apple sauce, and fall dressing with gravy.

 

What’s your favorite fall recipe?

Fall is my favorite time of year.  I love that the cooler weather has us turning to warm and comforting soups and stews.  One of my favorite recipes is my wife’s Kale soup, passed down through the Portuguese side of her family.  This soup makes an appearance in our kitchen several times a month through the fall and winter seasons, and we never get sick of it!  

What’s your favorite fall recipe?

Portuguese Kale Soup:

2-3 cloves of garlic, whole
1 onion, halved
1 onion, chopped
2 carrots, scrubbed and peeled
4 carrots, peeled and sliced
4 potatoes, scrubbed, peeled and chopped
1 whole chicken, rinsed
2 links of chourico or linguica (Portuguese spicy sausage)
1 bunch of kale or collard greens, washed and torn into palm sized pieces
3/4 cup of orzo
1 cup of red kidney beans (cooked)
salt and pepper to taste

Fill a large stock pot 3/4 with water.

Add the garlic, two whole, scrubbed/peeled carrots, an onion sliced in half, the whole chicken, sausage links, and a good pinch of salt and pepper.  Cook on medium-high for 90 minutes or so, until chicken is falling off the
bone.  Remove chicken, chourico, and veggies and set aside.

Add the potatoes to the pot.  Cook until water reduces a bit and the potatoes are softened.  Add
the kale and beans.  Shred the chicken, slice the sausage, and add
back to the pot.

After the kale wilts add in the the orzo, cook another ten minutes and
then adjust salt and pepper to taste.

Serve with crusty rolls and butter.

Come down and enjoy Springfield’s premier Oktoberfest celebration along with our Chef James Stegall’s famous schnitzel, spatzle, goulash and pretzels at Oktoberfest in the Ozarks! 

Mother’s Brewing Company says:  “Come see us in Mother’s Backyard (215 S. Grant Ave. Springfield, MO) on Saturday, September 8th. Gates open at 1:30pm and the event runs from 2pm-8pm. Only $5 at the gate and kids 15 and under are free. Don’t forget to bring your lawn chairs and/or blankets as your Mother’s wants you to be comfortable as you sit in the backyard eating traditional German foods while listening to great local music and enjoying a few local craft beers.
